À la carte L’Orée du bois takes part in Quebec’s regional cuisine which favours local terroir products. We have always, that is to say since September 1978, given preference to the region’s small-scale producers, from both sides of the river, and then to those from across the province.
We are craftsmen that must, without denying our present times, conserve some traditions, tricks of the trade and a know-how, and convey them.
We cultivate our herbs, smoke our fish, make our charcuterie, stocks, chocolate, pastry, vinegars and we flavour our oils.
